
The name of this badass, affordable, casual dining 100% plant-based restaurant is, "Veggie Grill." It was founded in Southern California, in the city of Irvine. It is headquartered, however, in Santa Monica.
If you click the link below, you'll see all of their locations throughout the country. As I just learned, they have three locations in Seattle and several in other states for when you're traveling (California, Illinois, Massachusetts, New York, Oregon and Washington). The director Keven Smith swears by this place for aiding in his proactive approach to protecting his health and aiding in his weight loss.

Their menu is seasonal. Some dishes come and go, others remain perennially.
Everything I've tried on the menu is great and their menu is huge. However, here are a couple recommended dishes (if they serve them in your area):
Far East Bowl. Ask for the Sesame-crusted Chickin' and Chipotle Ranch Dressing on the side to dip the Chickin' in. Sooo yum!
Cauli-mashed Potatoes and Gravy.
